In celebration of Sustainable Gastronomy Day, Shanti Maurice presents a limited-time culinary experience centred around one quietly remarkable ingredient: vanilla cultivated within our gardens.
Thoughtfully crafted by our culinary brigades, the menu explores lighter, seasonal flavours through a refined plant-based approach where vanilla unfolds in subtle and unexpected ways.

Grown with care
Our vanilla vines have been growing within the resort for over eight years and are pollinated by hand — a delicate process affectionately referred to by our team as “the wedding.”
Harvested seasonally in small quantities, the vanilla inspired this limited-time dining experience celebrating flavour, craftsmanship and seasonality.
